The word robata (炉端) means "by the fireside". It describes a style of Japanese grilling that originated in the fishing villages of northern Japan, where fishermen would cook their catch beside an open charcoal hearth and pass food to guests on wooden paddles.
At the centre of Robata cooking is binchotan — a dense white charcoal that burns remarkably clean and extremely hot. Rather than licking flames, the heat is radiant and even. An ingredient is seared quickly on the surface, developing char, aroma and caramelisation, while staying moist and true to its natural character inside.
